To celebrate the 4th of July being a long weekend we headed out to Roosevelt, Utah to visit an old friend of Chris' and his wife and little daughter. They were wonderful hosts and we had a fabulous time! Where else in the world would anyone let Chris milk a cow? They really have such a nice place. Colt built their house, they have enough chickens to feed an army with eggs, they make their own butter and cheese with the milk they get from their cow and if that weren't enough they have just started keeping bees so that they can harvest their own honey, not to mention their huge beautiful vegetable garden in the back yard! I was in awe and so impressed with their self-sufficiency, I'm still dreaming of someday starting our own garden. We loved being their and had a great time playing games after the kids were in bed and running around Roosevelt all day. Unfortunately Chris and I both woke up Sunday morning with bad stomach aches and spent the rest of the day sharing time in the bathroom losing our lunch. That put a bit of a damper on our holiday, but Chris recovered really quickly and was out eating hotdogs over a campfire the next day. I was a bit more delicate for a few days, but we still had a great time!

Roosevelt, Utah!
