Recipe of the week


I've been thinking lately about starting a new blogging tradition and now I am finally doing it- so welcome to the recipe of the week! I love cooking and have been trying out lots of new recipes here in England that I feel are worthy of sharing. I'll post the successes and hope that maybe some of them will help inspire 'what's for dinner' for any of you!

P.S. Anna this is what I was making Monday night when I was on the phone with you- it was amazing, you have to try it and tell me what you think!


Sticky Sausage and Sweet Potato Salad


8 Pork Sausages (I used a flavored kind- Apple and Pork for extra flavor)

1lb 5 oz Sweet Potatoes, (2 med or 3-4 small) cut into thin wedges

1 tbsp olive oil

2 tbsp Dijon mustard

3 tbsp honey

Bag of baby spinach (enough to share between 4 plates)

DRESSING:

5 tbsp olive oil

2 tbsp white wine vinegar

1 red onion, thinly sliced


Heat oven to 375. Toss sausage and sweet pots in a roasting tin with the 1tbsp oil. Roast for 30 minutes, mix the mustard and honey together and stir into the tin. Roast for 10 minutes more until 'sticky' and cooked.

Meanwhile mix dressing ingredients and let sit while roasting finishes (this will allow the onion to soften a bit!)

When the sausage is ready, thickly slice them and mix back in with the sweet potatoes. Pile spinach on plates, then top with sausage slices, sweet potatoes and dressing.


This is an easy and super tasty meal- very filling, you certainly don't feel like you are eating a salad!
