Clotted Cream


For this week's 'British item spotlight' I would like to introduce you all to clotted cream. Let me just say right off the bat that the first time I heard the words "clotted cream" images of something akin to the tub of cottage cheese that has been sitting in the back of the fridge too long, or whole milk that saw it's expiration date three months ago were conjured in my mind. Who ever thought that the word clotted would make anyone salivate? It tends to sound like a doctor's diagnosis that no one wants to hear. But, alas my resolve to shun all things clotted was easily conquered when that first blessed bite passed my lips. I am in love!....oh, clotted cream where have you been all my life? It is the perfect marriage between something custardish and something like whipping cream. It is almost chewable in it's thickness and it is amazing when slathered on top of an all butter scone. Thank you England for bringing such a beautiful thing into this world...viva la clotted cream!

Wow, so it's a topping... I thought it was its own dessert, like creme brulee or something... or is it?
